Variants of caper pesto
The caper and olive pesto is one of the most common variants. Characterized by a strong taste and a strong flavor, it is loved by connoisseurs of the genre. It can be eaten plain or combined with a tomato sauce .
Cucunci pesto is instead the caper patè that comes out of the fruit of the caper plant (the cucuncio , in fact) and not from the flower that has not yet opened (which, for the uninitiated, is the caper). Among the various possible additions are mint, oregano and garlic.
How to use caper pesto
The caper sauce that comes out of it is ideal for dressing spaghetti and long pasta in general, both alone and in combination with cherry tomatoes or courgettes. It is also delicious to use as a caper cream for croutons , bruschetta and toast. And again for canapés, as a filling for savory strudels or to spread inside sandwiches before stuffing them with various cheeses and sausages.
storage
Keep the caper pesto in the refrigerator for about 4 days in a glass jar with a lid. Complete with olive oil on the surface to lengthen storage times. For even longer storage, use the freezer.
