Strawberry granita from Messina is one of the flagships of Sicilian cuisine . The Sicilian pastry shop, in fact, does not only offer cannoli and cassata . Already during the month of April, the first granitas begin to emerge, summer sweets par excellence that are slowly replacing croissant and cappuccino in the breakfast of Sicilians . Why yes, it is with granita that we Sicilians start the day, better if topped with whipped cream and accompanied by brioche with tuppo (the latter to be dipped strictly before the rest, but that's another matter).
Before going on, we can't fail to point out this Organic Sicilian Granita Kit with Brioche col Tuppo , a small revolution that will allow you to enjoy an authentic granita at home, wherever you live.
How to make Messina strawberry granita at home
Let's get one point straight away: strawberry granita is made with… strawberries! Don't be tempted by the syrup : you won't get the original. This must be creamy and have a natural flavor, it must not have artificial aftertastes. In short, it wouldn't make sense.
The ingredients for a creamy strawberry granita
Only water, sugar and fresh seasonal fruit which, for preparation, must be tasty and ripe at the right point. Being a really simple recipe, it is essential that the raw material is of great quality.
- 1 kg of strawberries
- 1 lemon
- 150 g of granulated sugar
- 500-600ml of water
The original recipe for strawberry granita
- Clean the strawberries and remove the stems, then pass them through a sieve.
- Keep them aside while you take care of dissolving the sugar in the water. Use more or less depending on the density of the strawberry puree.
- Boil the syrup for 5 minutes, then turn off the flame, let it cool and add the squeezed and filtered lemon juice.
- Pour over the strawberry puree, mix well and transfer into a suitable container, inside the freezer.
- Let it solidify for 6-8 hours being careful to mix it with a spoon from time to time. Serve in glasses and enjoy.
Strawberry granita with ice cream maker
Alternatively, you can use the ice cream maker . Once you have obtained the strawberry mixture, just pour it into the appliance and operate it respecting the times set by your appliance's instructions. Generally, the granita is ready to eat in just under half an hour.
Strawberry granita with Thermomix
Equally simple is to prepare the strawberry granita with the Thermomix : pulverize the sugar for 20 seconds at Turbo speed. Add the ice (made with the water indicated in the recipe above), the strawberries cut in half and the lemon juice. Set 2 minutes from speed 6 to Turbo. Collect the mixture and serve. Instead of ice, you can make strawberry granita with frozen ones , with the Thermomix it will be ready in a few minutes.
